A COLCHESTER health club and spa relaunched its restaurant by serving up an edible tree.
The whacky creation was served up by Paul Boorman, award-winning chef at Clarice House’s Juniper restaurant.
Paul was named Colchester Chef of the Year in 2007 and 2008, received an AA Rosette and last year won the title of Essex Chef of the Year.
One of his signature dishes is fruit foams sprinkled with space dust and alcoholic bubbles.
And he was more than happy to do something a bit special to celebrate the re-naming of the restaurant.
Paul said: “The trunk was made out of a dense granary dough, which we painted with a marmite glaze while the leaves were set green olive puree and the juniper berries gin and tonic jellies.
“We wanted to relaunch the restaurant because I think a lot of people don’t realise where we are and that we are open to the general public, not just members of the club.”
The restaurant is in the old Kingsford Park Hotel, in Layer Road.
