Gazette: Dave cooks for top TV chefs Dave cooks for top TV chefs

A CHEF used the skills he has learnt at Dedham’s Le Talbooth restaurant when he cooked for TV chefs Michel Roux Junior and James Martin.

Dave Wall, 28, senior sous chef at Le Talbooth, reached the semi-final of Roux Scholarship competition.

Before the competition, he was set the challenge of creating a meal using a saddle of venison, which he then had to cook on the day.

Le Talbooth was the caterer responsible for the Colchester Oyster Feast where so many people got food poisoning from those Irish oysters, which apparently had not been kept at the correct temperature. Let's hope Dave Wall was not involved in that sorry saga.

My father cam here to town in 1960 and was relatively well known Ice Carving and Lard?Butter sculpture.
Len Vencato to his friends and chums he had the pleasure of being Head Chef At The Red Lion and The George Hotel:
My dad was always of a break seen walking up and down the high street with his whites on he was esentric I think there were occasions when he never took his tall hat off:
My dad had the pleasure of doing a number of famous weddings in the town including Mr Ron West. Dad said that the gift from Ron's father in Law in the Red Lion walk under pass, was a Jaguar car tied in a bow.
Ala carte' and Table D Hote' catering was always available here and the local technical college now Colchester Institute was famous and re-known for its Catering Education provision.
The Oyster feast this year as I understand had issues. However the Milsom group is one of the best of its kind in the country and we really should embrace it and be proud, my father was.
Long may it continue including are now famous Colchester Pudding and well done to Mr Dave Wall.
