A PROFESSIONAL chef says he has realised his dream of introducing traditional Chinese cuisine to the people of Colchester after opening a restaurant.

Paul Wei, also known as Chao, is the proud owner and head chef of Wei’s Kitchen, which launched in North Hill towards the end of this month.

The 49-year-old, who previously lived in Beijing, first moved to the country 23 years ago to study the English language at Colchester Institute.

He then took courses in hospitality and catering before landing a job as a cook at the highly-rated Peldon Rose Inn, located on the outskirts of the borough.

After six successful years, Mr Wei finally opened his own business, a fish and chips shop in Ipswich, which he toiled over for more than a decade.

As a result of the coronavirus pandemic, however, getting his newest venture off the ground has not been as plain-sailing, but he is delighted be finally welcoming guests.

“Before I came to England I was a professional chef working in the Beijing Hotel, which used to hold state visits and I was the chef who served the meals,” said Mr Wei.

“But I always wanted to open a Chinese restaurant because it is my dream to introduce new Chinese cuisine to the British people.

“I found this opportunity [to open a restaurant in Colchester] in 2019 - it has been a big challenge for me during this difficult time but I did not give up my dream.

“After nine months we have refurbished the property and we are finally open.”

Mr Wei’s traditional eatery offers everything from crispy duck and stir-fries to vegetable spring rolls and deep-fried spare ribs.

Since opening its doors to customers the restaurant has garnered positive reviews with some guests describing it as “fantastic” and the “best Chinese”.

The cooking connoisseur added: “My field is hot and spicey Chinese food, which is also known a Sichuan cuisine.

“It is a big difference from Cantonese style, which is well known here in the UK as Chinese food.

“I just want British people to try a different Chinese food and experience hot and spicy food.

“We sincerely invite you all to have a visit.”
