MERSEA oysters are a “thing of beauty,” proclaims TV chef Phil Vickery, before enticing his co-presenter to sample the aphrodisiac.

Phil from ITV’s This Morning whipped up dover sole tacos on Mersea beach and told viewers how he consumes thousands of oysters.

Family-run seafood restaurant The Company Shed supplied the shellfish, which owner Richard Haward explained is best eaten alone to “savour the flavour”.

He said: “To get the real taste you should eat just the oyster on its own.

“Some people eat them with with lemon or black pepper but shallot vinegar is also a classic as well as Tabasco sauce, which I don’t think is the best accompaniment as it overpowers the taste.”
