COLCHESTER’S first “eco-takeaway” is set to open.

April Moodie is promising nutritious nosh from her new business The Nourish Co, which will open in St John’s Street on Friday, October 23.

The former St Mary’s School pupil, who has been vegan for five years, said: “Colchester is spoilt for choice with some fantastic vegan options, but I have been keen to fill the gap for those who want a healthier option on the go, especially for breakfast.

“We are the first real healthy foods cafe in town.

“Everything is homemade which means prices can be kept lower, making balanced eating more affordable.”

April, 25, who will prepare and package the food every morning, will be serving sandwiches, porridge, noodle pots, cakes and salads.

There will also be a hot dish of the day, including curries and soups, and gluten-free options.

The business, which has created three part-time jobs, is in the same building at the Music Warehouse, which April’s parents own.

The room has undergone a drastic change from storage space to a takeaway, which has involved fittings being handmade to fit in the usual space in the old building.

April has sourced all her products from small businesses.

Ahead of the opening April has been promoting the takeaway online and has been overwhelmed by the response.

Within 24 hours her Facebook page had 300 likes.

She said: “I think it’s quite a growing community in the town.

“Because it is quite a niche thing, people get quite excited and will share and spread it.

“It has all suddenly become really real.

“I’m feeling quite confident. I don’t really know what to expect.

“I just hope lots of people come down to try it out.”
