Ceremony celebrates opening of oyster fisheries
A TOAST of gin and a piece of gingerbread marked the opening of the Colne oyster fisheries.
The annual ceremony is held on the first Friday of September to mark the official start of the oyster fishing season.
Colchester mayor Colin Sykes led the historic event, decked out in full regalia, alongside Colchester Council’s chief executive Adrian Pritchard and the Town Serjeant Michael Kirby.
Mr Pritchard read the proclamation, an ancient tongue-twister, to declare the fishery open and Mr Sykes raised a loyal toast to the Queen - with a swig of gin and piece of gingerbread and Colchester pudding.
